Grilled Watermelon, Lime, Goats Cheese & Prosciutto Salad

  • 1/8th Watermelon
  • 6 Super thin freshly shaved pieces of Prosciutto
  • 3 cubes Marinated goats fetta cheese
  • 1 handful Mint leaves
  • 1 Fresh lime
  • Olive oil, marinated fetta oil


  • 1)

    Slice watermelon into 3cm wide triangles, remove pith and slice into rectangular lengths.

  • 2)

    Brush watermelon with goat cheese oil or olive oil and place onto hot grill oil side down for 2 mins. Brush other side with oil and flip for another 2 mins.

  • 3)

    Remove watermelon and place into freezer until cool.

  • 4)

    Cut grilled watermelon into cubes and layer into your favourite salad bowl.

  • 5)

    Add some lime zest, finely sliced mint, sprinkle of goats fetta cheese and torn pieces of procuitto. and squeeze of fresh lime.

  • 6)

    Repeat the process with another layer.
