Dolmades | Med Xmas Feast Ep4 | @recipearce #recipe

I LOVE dolmades! I could literally eat 100 of them… But like filling water balloons in the 90’s they are kinda a pain in the arse and once they are all made they’re gone in a split second. That is of course because these warm homemade versions are insanely tasty. Make them a couple of days before for the best result and warm them through to kick off your Christmas feast. Makes Approx 20 Dolmades

INGREDIENTS
Vine leaves (or silverbeet)
Quality Olive oil
1 Brown onion
75g Speck
500g Beef mince
150g Short grain rice (I used sushi rice)
1L Chicken Stock
100ml Fresh squeezed lemon juice
Lemon zest
Bunch fresh dill
Bunch fresh parsley
Dried oregano
Freshly cracked pepper

This simple, salty, sweet and smokey starter is the perfect way to kick off a Christmas Feast, especially when paired with some flatbread and Saganaki. It can be messy in the kitchen when putting this one together but the @wusthofaustralia Classic White Knife Block made light work of it and the best bit is the Classic White Knife handles don’t stain which is great when using ingredients that are notorious for staining. 🦪 Sydney Rock Oysters w French shallots & Vermentino | Med Xmas Feast Ep1

Oysters are the ultimate entertaining food in my opinion they’re a real celebration of produce, so easy to plate up and really set the tone for a great meal!

They key with buying oysters is to talk to your fish monger, see what’s eating the best and get them shucked as close to your event as possible OR IDEALLY order some live ones and shuck them fresh for the day (it’s not as hard as you might think)

I ALWAYS try one first as there would be nothing worse than playing up a dud batch of oysters. You want them to look appetising, taste of the ocean, be plump and characteristics of the oyster will depend on the species and where they are grown.

I used @l.a.s.vino Vermentino as the grapes were dunked in the ocean before fermentation really highlighting the saltiness and minerality in these beautiful oysters!

🦀Mud Crab Cocktail Sliders 🥪

These guys are the perfect summer supper with a glass of your favourite bubbly liquid! 🥂 I made these with soft avos but lightly butter toasted brioche would be epic too.

Ingredients
2 picked mud crabs
1 ripe avo
1 head iceberg
Heaped tablespoon Fresh dill
Heaped tablespoon Fresh chives
1 Lemon or lime
Kewpie Mayo
4 soft rolls (I used baps, you could use mini brioche too)

Method
1. Get 2 mud crabs worth of meat, see my how to cook a mud crab video if you are cooking them yourself. Add a finely chopped tablespoon of both fresh chives and dill to meat in a bowl. Add the zest of a lemon or lime and small squeeze of the juice, approx 2 tablespoons. Add four tablespoons of kewpie Mayo. Give it a gentle mix.
2. Very finely slice iceberg lettuce.
3. Cut slithers of avo
4. To assemble either cut rolls fresh or lightly toast rolls in butter in a pan then add some kewpie, avo, crab, lettuce and the lid!

🦀 How to cook a Mud Crab 🦀

Alright folks here is how cook I a mud crab

Ice down the crabs in a freezer or esky to put them to sleep.

Then pop them into a deep pot of boiling salted water or sea water for 11 minutes.

Once cook pop them into an salty ice bath for 11mins until they’ve chilled down to stop the cooking process

Pop your thumbnail underneath the triangular section of the body to remove the carapace.

Remove all these guts and gills whilst trying to keep the meat clean.

Crack the crab in half then half again and pop that into a clean bowl. Twist off all the legs from the body and leave those in the bowl too.

Move to a bench and pick the meat from the body discarding the shell.

Next use back of your knife to crack the legs and remove as much meat as you can discarding the shells.

Do one last check through your crab meat make sure there is no shell. Now you’ve got your pick crab meat ready to make you’re recipes.
