  • This is one of my favourite ways to each chicken. This dish is simple but the keys here are marinating the chicken a couple of days before, cooking over charcoal, quality olive oil, quality flakey salt and cooking the chicken so it’s just cooked and rest it so it’s super juicy and tender.  You can also just do this on a bbq or grill pan.

It’s such a simple salad but with bit of technique it’s really exceptional and every time I’ve made it for people they ask what’s in it. Perfectly paired with some rich meats as the acidity cuts through the fattiness perfectly. Give this one a crack guys!
