Avocado Pesto Pasta

Ingredients

  • Salt
  • 100 g Macadamia nuts
  • Basil
  • Parmesan or Pecornio
  • 1 Lemon
  • 1.5-2 Avocados
  • 1 Garlic clove
  • 50 ml Olive oil
  • Pasta
  • Chilli flakes

Method

  • 1)

    Bring pot of salted water to the boil.

  • 2)

    Blitz macadamia nuts into a crumb in a food processor. Then transfer into a bowl.

  • 3)

    Add leaves of basil, approximately 60g of parmesan/pecorino, zest and juice of lemon, avocado, 50ml of olive oil and grated garlic clove into the food processor, blitz together. Add to the bowl with the macadamia crumb.

  • 4)

    Add a good crack of pepper to sauce. We added a pinch of salt (taste first as cheese can be very salty)

  • 5)

    Cook pasta as per the packet instructions in the pot of boiling water.

  • 6)

    Once pasta is cooked strain water and add the sauce. Mix together, covering all the pasta.

  • 7)

    Transfer into a serving bowl or individual bowls and top with grated parmesan, cracked pepper and chilli flakes (optional)
