- Eggs, (2 per person)
- Small Potatoes
- Avocado
- Salsa Roja, (see recipe)
- Shredded Cheese
- Fresh Coriander
- Lime

Method

Chop you potatoes and chuck in the oven to roast

Lay your bacon on a baking tray and pop under the grill until nice and crispy.

Crack and whisk your eggs in a bowl.

Get a pan on medium heat, add some butter and pour your eggs into scramble.

Heat up your wrap to make in pliable

To assemble spread your sour cream and layer on your bacon, scrambled eggs, roast potatoes, avocado, salsa roja, shredded cheese, coriander and lime juice.

Wrap it up and place it join side down in the pan to seal. Flip to toast both sides.
