Baklava Peaches

This is a celebration of beautiful summer fruit done baklava style. You can serve them up individually or just plonk them in the middle of the table. These peaches have been baked with the beautiful @westgoldnz salted butter which you can now grab from both Coles and Woolies.

Ingredients

  • 4 Ripe Peaches
  • 100g Westgold salted butter
  • Honey
  • 100g Filo pastry
  • 50g Shelled pistachios
  • Vanilla ice cream

Method

  • 1)

    Preheat the oven to 200C. Half and de-pip the peaches, place them on a lined baking tray cut side up with a thin layer of butter on each and a drizzle of honey. Then into the oven for 25 minutes or until soft and golden.

  • 2)

    Crumble the filo over a lined baking tray pour over 50g of melted butter and give it a mix. Then into the oven for approx 10 minutes until golden and crispy. Finely chop the pistachio nut and mix it through the filo once it’s cooled a little crumbling it all together.

  • 3)

    To plate up add some honey to the plate then some of the filo mixture, followed by another generous drizzle of honey, a half peach and a scoop of ice cream. Alternatively, serve it up it the middle of the table and let everyone go for it.
