Ingredients

  • 1 Chorizo sausage
  • 1 Corn cob
  • 1 400g can Kidney beans or black beans
  • 1 Handful Cherry tomatoes
  • 6 Tortillas
  • 1 Handful Coriander
  • 1 Avocado
  • Chilli flakes
  • 6 Eggs
  • Butter
  • Olive oil
  • 1 Lime
  • Chipotle mayo or aioli
  • Hot sauce, (optional)

Method

  • 1)

    Slice up chorizo quite thin. Put into pan on medium heat, don’t use butter or oil due to fat content of chorizo.

  • 2)

    Dehusk and chop kernels off cob of corn, then add to pan

  • 3)

    Strain and rinse can of beans thoroughly, then add to pan. Give pan a good mix.

  • 4)

    Cook chorizo for approximately 10 minutes in total until it has good colour.

  • 5)

    While chorizo is cooking, chop up cherry tomatoes, coriander and avocado with a sprinkle of chilli flakes into a bowl and mix.

    Cook tortillas for approximately 30 seconds to 1 minutes on each side in a dry pan.

  • 7)

    Then add knob of butter and drizzle of olive oil to pan and fry eggs.

  • 8)

    Zest and juice a lime into the tomato salsa.

  • 9)

    Once eggs are cooked start to plate tacos. Start with a spoon of mayo, then add chorizo mix, then add tomato salsa, then fried eggs and optional to top with hot sauce.
