For episode #9 of our postpartum ‘Yummy Mummy Series’, we’ve partnered with our mates from @wusthofaustralia to bring you this really quick, easy and delicious noodle recipe. You can make a big batch and have it in the fridge or freezer, ready for easy reheating. You’ve gotta have a good set of knives to finely slice your ingredients, it makes all the difference in a stir-fry dish like this.
Beef, Bean and Cashew Udon Noodles

- 250g Green beans
- 250g Snow peas
- 4 Shoots spring onion
- Fresh coriander
- 150g Cashews
- 2 Garlic cloves
- 1 Tsp Ginger
- 1 Tbsp Sesame oil
- 3 Tbsp Honey
- 1 Lime
- 100ml Soy Sauce
- 600g Beef
- 1 Tbsp Corn flour
- 360g Dried udon noodles
- Olive oil
Method

Pop on a pot of boiling water for your noodles. Then on a chopping board remove the ends from the beans and slice them down the middle, knock the ends off the snow peas and finely slice those. Then finely slice the spring onion and roughly chop a handful of fresh coriander. Whack the cashew next to all those ingredients so you’ve got everything you need once you are ready to cook.

To a dish grate or press 2 cloves of garlic and small knob of fresh ginger, add 1 tablespoon sesame oil, zest and juice of one lime, 100ml soy sauce and 3 tablespoons of honey.

Slice beef into stir fry strip and add a heaped tablespoon of corn flour and toss it through the beef.

Throw the noodles into the boiling water and set a timer for 9 minutes (or whatever the cooking instructions say).

To a wok or a pan on high heat add some olive oil and the beef and cook for 2 minutes, add the green beans and the sauce and give that a toss and keep it moving for a couple of minutes, add the green beans and the sauce and give that a toss and keep it moving for a couple of minutes. Then add the snow peas and cashews and take if off the heat.

Once the noodles are cooked drain them off and rinse under cold water to stop them from cooking and sticking together. You can then add them to the stir fry and turn heat on low. Add the coriander and spring onion and toss through.
