Ingredients
- 200 - 250 g 1/2 Pork mince and 1/2 beef mince
- 1 Red onion
- Butter
- 1 Tsp Salt
- 2 Tsp Paprika
- 1/2 Tsp Sumac
- 2 Bacon rashers
- 2 Cheese slices, (mozzarella, jarlsberg...any, you choose)
- 1 Milk or brioche bun
- 2 Tomato slices
- Iceberg lettuce
- Chipotle mayo
Method
- 1)
Slice red onion. Put in saucepan with good knob of butter on medium heat for 5 – 10 minutes, add a little bit of water to deglaze the pot.

Either dice your meat in preparation to mince it or get your preminced meat.
- 3)
Season the meat with salt, paprika and sumac. Then mince if needed.
- 4)
Important to have a ring to shape the patties so they are all consistent. Place into ring.

Allow meat to room temp before cooking.
- 6)
Add bacon to hot pan until crispy on both sides then remove from pan. (shouldn’t need butter or oil due to fat content of bacon)

Then without cleaning the juice from bacon from the pan, cook patties 4 minutes either side.

Prep toppings by thinly slicing tomato, slicing bun sized slices of lettuce and cheese.

Once flipped to cook the second side, put cheese and bacon on top to melt.
- 10)
Allow to rest for 5 minutes off heat.
- 11)
Clean oil from pan. Add a small knob of butter and toast buns for approx 1 minute face down.

Now assemble the burgers – Nick’s perfect order
– Spread out red onion
– Add sliced lettuce
– Add tomato
– Add patty with cheese and bacon
– Add and spread dollop of chipotle may to bun top and place on top. - 13)
