Ingredients
- 6 Barra Fillets, (or any local fish or protein you wish to use)
- 150g Salted Butter
- 2 Brown Onions
- 1 Tbsp Fresh Grated Ginger
- 1 Tbsp Finely Chopped Garlic
- 1 Lemon
- 1/2 Tbsp Ground Tumeric
- 1 Tbsp Garam Masala
- 400g Tinned Chopped Tomatoes
- 500ml Chicken Stock
- 300ml Fresh Cream
- 1 Zucchini
- 1 Brocolini Bunch
- 1 Tbsp Honey
- Flakey Salt
- Cracked Black Pepper
- Coriander
- Chilli Oil , (optional)
Method

Melt 150g of salted butter into a deep pot, finely dice 2 brown onions and sweat down for 5 mins. Add the ginger, garlic, turmeric, garam masala turmeric, zest of one lemon and sweat that down for a further 5mins.

Add the tin of tomatoes and 500ml of chicken stock and one finely sliced zucchini, cream and honey. Give that a stir and simmer for 20mins until it visibly thickens then turn off the heat and add the broccolini.

Heat grill on high and once hot add some olive oil, salt the fish and grill the Barra until crispy and golden (approx 3mins) then flip for 1-2min.
- 4)
Taste it and adjust the seasoning with flakey salt and fresh cracked pepper and squeeze of lemon juice.
- 5)
Serve with coriander, chilli oil, rice & naan.
