Ingredients
- 3 Smaller sized hoods of squid, (or equivalent)
- Grape seed oil
- Semolina flour or rice flour
- 1 Lemon
- Pepper
- Salt
- Chilli flakes (optional)
- Rocket or kale
- 1 Tbsp Aioli or mayo
- Parmesan
Method

Clean up squid or buy it already tidied up by fish monger
- 2)
Cut the squid into pieces or rings
- 3)
Start heating up oil in pot
- 4)
Give the squid a good dry with paper towel
- 5)
Put flour into bowl, add calamari to flour.

Add zest of a lemon, crack of pepper, small pinch of salt and some chilli flakes in a bowl

Give a good mix and coat all calamari
- 8)
Use a thermometer and aim to heat oil to approx 190C. You want to fry calamari to 180C but it will drop once calamari is added.

Have paper towel next to pot to place calamari on once fried

Fry in small batches for 40 – 50 seconds. Do no overcrowd the oil

Once calamari is fried, give small pinch of salt
- 12)
Add greens, aioli and juice of one lemon to bowl and mix
- 13)
Peel ribbons of parmesan onto greens
- 14)
Add calamari and lightly fold through greens
- 15)
Serve and enjoy
