A great side salad to have alongside any protein, or make a big batch and have it on its own. Homemade hummus top with cauliflower, grapes and almonds!
Cauliflower Salad With Homemade Hummus

Salad
- 1 Head Cauliflower
- Handful Grapes
- Handful Almonds
- Lemon
- Salt
Hummus
- 1 400g Chickpeas
- 1 Lemon
- 1 Tsp Cumin
- 1 Garlic clove
- 1` tsp Tahini
- Salt
- 100ml Filtered water
Method

Preheat oven to 180C
- 2)
Cut up head of cauliflower, drizzle with olive oil, cumin and salt. Place in oven for 30 minutes.

While the cauliflower cooks make hummus. In a blender add chickpeas drained, zest of 1 lemon, cumin, garlic, tahini, lemon juice, 2 pinches of salt and filtered water.

Cut up the grapes and activated almonds.
- 5)
When cauliflower is ready get out of the oven.
- 6)
Spread hummus out across serving plate/bowl and top with cauliflower, grapes, almonds, sprinkle of salt and squeeze 2 cheeks of lemon over the top.
