Chargrilled Oregano Chicken

This is one of my favourite ways to each chicken. This dish is simple but the keys here are marinating the chicken a couple of days before, cooking over charcoal, quality olive oil, quality flakey salt and cooking the chicken so it’s just cooked and rest it so it’s super juicy and tender. 

You can also just do this on a bbq or grill pan.

Ingredients

  • 12 Skinless Chicken Thighs
  • 1 Lemon
  • 4 Cloves Garlic
  • Bunch quality dried oregano
  • Flakey Sea Salt
  • Freshly Cracked Pepper
  • Quality Olive oil

Method

  • 1)

    To a bowl add the chicken thighs, zest of one lemon, four chopped garlic cloves, a really generous sprinkle of the dried oregano approx a heaped tablespoon and drizzle over generous amount of quality olive oil and mix the chicken to coat in the marinade. Try and marinate overnight or a least a few hours before you cook or up to 3days before you cook.

    if your cooking over charcoal get a nice bed of coals and bring your chicken up to room temp before cooking, give it a few minute of the side the skins would have been then flip it to cook through. You want the fire to be really hot to get a nice char but without drying out the meat as it cooks. You want your chicken just cooked on the inside for the most tender as it will to continue to cook as it rests. Use you intuition when grilling over the coals and you can always cut a piece to check. Rest the chicken and drizzle over some olive oil, fresh lemon juice, dried oregano and flakey salt and fresh cracked pepper to serve. enjoy!

    *If you doing on the stove you can do it in the pan, or on a stove top grill too or just a gas bbq.
