Ingredients
- Vegetables of your choice
- 1/2 Jar Thai green curry paste
- 2 400 ml Coconut cream
- Lemon
- 2 Chicken breast
- Greens of your choice
- 2 Cucumbers
- 1 tbsp Fish sauce
- Lime
- 1 sml Block of palm sugar
Method
- 1)
Preheat oven to 180C and roast your vegetables of choice.
- 2)
In a pan add the Thai green curry paste and fry for 30 seconds.
- 3)
Add in the coconut cream, lemon zest, roast vegetables, chicken breast thinly sliced and greens of your choice. Cook for 5 minutes.
- 4)
While curry is cooking make a cucumber salad to serve on top of curry.
- 5)
Mandolin 2 cucumbers. Mix with fish sauce, zest and juice of lime, and a cube of palm sugar.
- 6)
Serve curry with cucumber salad on top.
