Melt butter in oven or microwave.
Pour flour and baking powder into mixing bowl.
Break chocolate into rough chunks.
Into a separate mixing bowl, crack 1 whole egg and 1 egg yolk.
Add sugar to bowl with egg and mix. Wanting sugar to start dissolving into egg.
Add vanilla extract.
Pour now melted butter through the egg and sugar mix.
Give the egg, sugar and butter mix a good whisk.
Next fold the wet mixture (egg, sugar, butter mix) through the dry mixture (flour. Create well in center of flour and slowly add wet mixture through. Fold as you pour.
Add your chocolate and stir through.
If your mixture still seems a bit stiff, add another egg yolk and mix.
If you do not want to use all of your cookie dough now, you can roll into a lot, wrap in glad wrap and freeze. Then cut off as required.
Either weigh out portions of cookie dough (we did 70g per cookie) or spoon out approximate amount. Roll into a bowl then softly squish. Place on baking tray with baking paper.
Put in oven at 170C for 12 mins.
Sprinkle with salt flakes after cooked.
Leave to cool for at least 10 mins.
