- Cooked rice
- Black beans
- Chorizo
- Eggs, (2 per person)
- Burrito wrap
- Avocado
- Green salsa verde, (see recipe)
- Shredded cheese
- Sour cream
- Coriander
- Salt

Cook some rice and mix with black beans.

Slice your chorizo

Whack a pan on high heat, add some olive oil and fry off your chorizo. Turn your chorizo over in the pan. Once the chorizo is nice and crispy, remove the chorizo from the pan.

Crack 4 eggs into a bowl and whisk.

Drain the excess oil from the pan, add in some butter and pour your eggs into the pan and scramble.

Warm up your burrito in the pan to make it pliable.

To assemble your burrito, spread the sour cream, shredded cheese, rice and beans mix, green salsa verde, scrambled egg, chorizo, avocado, coriander and salt.

Fold your burrito up and place the edge to the bottom of the pan to seal the burrito. Flip and cook the other side.
