Christmas Ham and Cheese Toastie

 Don’t throw out those Christmas hams or fancy cheeses that don’t all get eaten… makes this EPIC Christmas ham & cheese toasties.

Ingredients

  • Salted Westgold Butter
  • 2 Red onions
  • 1 Tsp Maple syrup
  • 1 Tsp Apple cider vinegar
  • 1 Tsp Seeded mustard
  • 4 Sourdough slices
  • Christmas ham leftovers
  • 6 Thick brie slices, (or whatever leftover fancy cheese you have left over from your festive platter)
  • Chives
  • Chilli flakes
  • Flakey salt

Method

  • 1)

    Slice two red onions and place them into a pan on medium heat with a tablespoon of Westgold salted butter and caramalise for 5 minutes. Add a tespoon of maple syrup, apple cider vinegar and mustard. Cook down until sticky (approximately another 5 minutes). Then take off the heat.

  • 2)

    Add the caramalised onion to two slices of sourdough then top with left over slices if Christmas ham and 3 thick slices of brie. Close up the sanga with another side of sourdough then generously butter both sides with West gold salted butter.

  • 3)

    Heat a pan to a medium heat and place the toastie in with a weight on top like another pan or heavy metal utensil. Cook for a few minutes until nice and golden then flip and cook for another couple of minutes. Don’t rush the cooking as you want that cheese to really melt through and to get a nice golden crust on the toastie. If the pan is too hot then the toastie will burn and the cheese will still be cold.

    The most important step is the garnish. Finely slice some chives and sprinkle the toastie with flakey salt, chives and chilli flakes to finish. It’s a revelation of flavour when it comes to a toastie.
