A super super quick (like we ate dinner at 5pm quick), vegetarian dish, using cashew cheese to create a creamy sauce!
Creamy Mushroom Pasta

Ingredients
- 2 Tbsp Butter
- 4 Handfuls Mushrooms
- 1 Garlic
- 1 Chilli, (optional)
- 2 Tbsp Baby capers
- 1 Bunch Parsley
- 1 Small handful Olives
- 2 Lemon
- Pasta
- 1/2 cup white wine or stock
- 2 Tbsp Cashew cheese
- Black pepper
- Chilli flakes
Method
- 1)
Melt the butter in the pan.
- 2)
Finely chop the garlic and chilli and add to the pan.
- 3)
Chop up the mushrooms and place in the pan, coat in the butter and turn up the heat to medium. After 5 minutes turn the heat up high. Cooking for another 10 minutes, stirring intermittently.

Chop up your capers, olives and parsley and zest the lemons.
- 5)
Put pasta on as per packet instructions.`.
- 6)
Add the wine/stock and cashew cheese to the mushrooms. Mix together.
- 7)
Add in the capers, olives, parsley and lemon zest. Mix and leave for another 5 minutes to cook.
- 8)
Chop a small handful of parsley to top the pasta.
- 9)
Juice 2 lemons into the sauce.
- 10)
Strain pasta when ready and then mix sauce through the pasta.
- 11)
Serve with a crack of pepper, fresh parsely and chilli flakes.
