This pickle is the perfect sidekick on a Sanga or salumi platter with some mortadella and buratta! The girls helped me re plant our @vegepodau and we made a Green tomato pickle with the toms and gonna whip up a huge batch of pesto with all the basil.

- 500g Green Tomatoes
- 1 Brown onion
- 2 Tbsp Salt
- 180ml Apple cider vinegar
- 150g Castor sugar
- 1 Tsp Ground cumin
- 1 Tsp Ground coriander
- 1/2 Tsp Fennel seeds
- 1 Tsp Ground tumeric
- 1 Tbsp Cornflour
Method
- 1)
To a saucepan add finely diced tomatoes and onion and add two tablespoons of salt and let sit in the fridge overnight.
- 2)
Next day drain off the liquid then cover the tomatoes in boiling water and strain then, repeat again to remove the salt. Place the washed tomatoes and onion back into the saucepan.

Add half the vinegar to the saucepan and bring to the boil and cover on the stove for 10 minutes.
- 4)
In a separate bowl, combine spices, corn flour and remaining vinegar and mix until combined.
- 5)
Take the tomatoes off the heat and stir in the spice mixture and add 150g of castor sugar. Stir to dissolve.

Place back on the stove to simmer with lid off until it is thick and jammy. Approximately 10 minutes.

Let cool then place into sterilised jars.
