Grab a pot and place on the stove top on a medium to high heat. Pour in 1 litre of milk and bring to the simmer.

Once the milk is simmering, squeeze in a fresh lemon and stir gently. This is when you will see separation beginning between the curds and whey. After a minute you should see a lump of curds. This is your ricotta.

Use a strainer to separate the whey (liquid) away from the curds (ricotta).

You can use the whey in baking, smoothie, things like this as it has a watery milky flavour.
