Make this creamy, homemade ricotta with just two simple ingredients—full cream milk and fresh lemon. 🍋 It’s surprisingly easy, and here’s the best part: you don’t have to waste the leftover liquid (whey)! Use it in baking and smoothies.

Ingredients

  • Full Cream Milk
  • Lemon

Method

  • 1)

    Grab a pot and place on the stove top on a medium to high heat. Pour in 1 litre of milk and bring to the simmer.

  • 2)

    Once the milk is simmering, squeeze in a fresh lemon and stir gently. This is when you will see separation beginning between the curds and whey. After a minute you should see a lump of curds. This is your ricotta.

  • 3)

    Use a strainer to separate the whey (liquid) away from the curds (ricotta).

  • 4)

    You can use the whey in baking, smoothie, things like this as it has a watery milky flavour.

  • 5)

    I added some salt to our ricotta and then made a smashed pea and ricotta bagel.
