Lactation Fudge Brownies

On episode #8 of our postpartum ‘Yummy Mummy’ series Poppy helped me whip us these deliciously fudge brownies!

These are the perfect baked treat to drop around to a new mamas house. Aaaand don’t worry fellas I’ve test drove a few, although they are called lactation brownies they won’t make you miraculously start sprouting milk! 😂

Ingredients

  • 250g Cooked sweet potato
  • 50g Unflavoured collagen
  • 20g Brewers yeast
  • 200g Salted butter
  • 200g Dark choc
  • 250g Coconut sugar
  • 2 Eggs separated
  • 15g Cacao and extra for dusting
  • 100g Almond meal

Method

  • 1)

    Preheat your oven to 180c, peal, chop and boil sweet potato until soft (approximately 20 minutes) then strain and set aside.

    Add the coconut sugar, melted butter, add egg yolks to a mixing bowl and whisk until smooth. Add the dark chocolate and cacao and mix through. Weigh out 250g cooked sweet potato and add that and squish with a fork then mix through. Add the almond meal, collagen and brewer’s yeast and mix that through thoroughly.

    In a separate bowl whisk the egg whites until they form soft speak (approximately 5 minutes) Fold those through the brownie mixture until smooth.

    Line a square brownie tin with butter then baking paper. Pour the brownie mixture in letting it settle on the bench so it’s nice and level. Pop it into the oven at 180C for 25 minutes (very fudgey) – 30 minutes (fudgey)

  • 5)

    Let it cool on the bench for at least 30 minutes or you can place it in the fridge. The benefit of this brownie is once it is stored in the fridge it stays really fudgey so it’s the perfect gift for a new mum that won’t dry out.

  • 6)

    Dust with cacao and slice into brownies. Enjoy
