Lamb Kofta Flatbread

Ingredients

  • Flatbread
  • 500g Lamb mince
  • Ground cumin
  • 1/2 Tsp Chilli flakes (optional)
  • 2 Lemons
  • Halloumi
  • Olive oil
  • Pepper
  • 1 Tbsp Natural yoghurt (per flatbread)
  • 1/2 - 1 Garlic clove
  • 1 Cucumber
  • 1 Tomato
  • 1/4 Red onion
  • 1/2 Avocado
  • Parsley
  • Mint

Method

  • 1)

    Set oven to 100C

  • 2)

    Put pan on stove on medium heat

  • 3)

    Put mince in bowl and add heaped teaspoon of cumin, good pinch of salt, chilli flakes, zest of 1 lemon

  • 4)

    Cup up haloumi into cubes and add to mince

  • 5)

    Give all a good mix with hands

  • 6)

    Roll into a small sausage, press haloumi into mince

  • 7)

    Repeat until all mince is used. Should be 9 koftas

  • 8)

    Put some olive oil into pan and add in koftas

  • 9)

    Pinch of salt and crack of pepper over koftas

  • 10)

    Allow to cook for 2-3 minutes on each side and act as though the kofta as 3 “sides”

  • 11)

    Make yoghurt by spooning yoghurt into bowl. Add 2 teaspoons of ground cumin, zest of on lemon and grate in raw garlic and give a good stir

  • 12)

    Koftas should now be ready to turn for first time

  • 13)

    Prep toppings. Finely chop, peel or mandalin cucumber and tomato into ribbons. Finely chop a few slices of red onion. Slice up avocado

  • 14)

    Cut cheeks off one lemon and finely chop some parsley and mint

  • 15)

    Koftas should be ready to turn onto final side

  • 16)

    Out flatbreads in oven for a couple of minutes (don’t want them to get hard and too crispy as they will crumble)

  • 17)

    Koftas should be ready and flatbreads should be taken out of the oven

  • 18)

    Scoop a tablespoon of cumin yoghurt onto each flatbread, put toppings and 3 lambs koftas on each

  • 19)

    Finish off with a squeeze of lemon

  • 20)

    Roll it up and eat it like a souvlaki
