Mac N Cheese

Ingredients

  • 200 g Speck
  • 500 g San Remo Macaroni
  • 1 Brown onion
  • 1 Head of cauliflower
  • 2 Lemons
  • 4 slices Bread
  • 100 g Parmesan
  • 100 g Butter
  • 250 g Gruyere
  • Salt
  • Pepper

Method

  • 1)

    Preheat oven to 220°C.

  • 2)

    Slice 200g of speck.

  • 3)

    Get speck crispy in a pan on high heat for approx 6 minutes, then remove from the pan.

  • 4)

    Cook pasta in pot of boiling water with a pinch of salt until el dente (8 mins).

  • 5)

    Strain pasta and run under cold water to stop cooking.

  • 6)

    Finely chop 1 brown onion.

  • 7)

    Pop onion into pan with the residual fat from speck and sweat down on low heat for approx. 4 mins.

  • 8)

    Slice head of cauliflower.

  • 9)

    Add cauliflower to pot with zest of 1 lemon. Put on heat for 8 mins.

    Add 4 slices of bread, zest of 1 lemon, handful of parsley, 50g of parmesan and 1 teaspoon of salt to blender and blitz to a bread crumb consistency. Then transfer into a bowl.

  • 11)

    Add cauliflower to blender after cooked with 50g parmesan, juice of 1/2 a lemon, 100g of butter, a pinch of salt and a few cracks of pepper and blitz.

  • 12)

    Put pasta into a pan, scatter speck over the top, then pour the sauce over, mix throughout and then smear the pasta down.

  • 13)

    Grate 250g of gruyere over the top.

  • 14)

    Pour pangrattato mix over the top (bread mix).

  • 15)

    And finish with grating a bit more gruyere.

  • 16)

    Pop in oven for 20 minutes (or until pangrattato is crispy and cheese has melted.
