Meat Balls

Either make your own tomato sauce or for a super easy and quick dinner option buy canned tomatoes! Our recipe uses macadamia nuts instead of breadcrumbs so it’s GF and you can choose to serve it with or with pasta!

Ingredients

Meatballs

  • 2.5kg Tomaotes, (or 2L canned tomatoes)
  • Olive oil
  • 1 Red onion
  • Small handful Rosemary
  • Small handful Thyme
  • 200g Natural macadamias
  • Salt flakes
  • Chillis
  • 1 Cup Red wine
  • 1/2 Tsp Paprika
  • 500g Beef mince
  • 500g Pork mince
  • 1 Egg
  • Cracked pepper
  • Goats or parmesan cheese
  • 1/2 Lemon

Salad

  • Cavelo nero
  • Lemon
  • Goats or parmesan cheese

Method

  • 1)

    If you are making your own sauce, put a good glug of olive oil in a saucepan, place tomatoes in saucepan, cook with lid on for 1 hour, then mash the tomatoes and allow to cook and reduce with lid off for a further 30 minutes.

  • 2)

    Preheat oven to 260C with baking dish inside.

  • 3)

    Finely chop red onion and sweat down onion on low heat with some olive oil for approximately 5 minutes..

  • 4)

    Chop rosemary and thyme.

  • 5)

    In a blender add the macadamias, a good pinch of salt and half of the chopped herbs. Turn the mix into breadcrumbs.

  • 6)

    Add other half of herb mix with optional chilli to onion.

  • 7)

    Let the herbs cook for approximately 1 minute then add red wine, turn up the heat and allow the wine to evaporate for approximately 5 minutes.

    Add paprika

  • 9)

    Once wine has reduced add 2L of tomato sauce to pot with onions. Leave the sauce to simmer on a low heat while your prep your meatballs.

  • 10)

    Mix together your pork and beef mince with your macadamia crumb.

  • 11)

    Add an egg and mix together

  • 12)

    Roll balls and put in baking dish

  • 13)

    Pour the tomato sauce over the top.

  • 14)

    Put in the oven for 20 minutes

  • 15)

    While they cook, make your salad by finely shopping cavelo nero and top with grated goats cheese or parmesan and juice of half a lemon.

  • 16)

    Once balls are ready, serve them (we did 3 per person) and top with some cracked pepper, pinch of salt, grated cheese, chilli flakes (optional) and squeeze of lemon.
