Ingredients
- 1 bunch Broccolini
- 50 g Butter
- 50 g Parmesan , + extra for topping
- 1 Lemon
- Pepper
- Salt
- 300 g Uncooked pasta (approx), (we used rigatoni)
Method
- 1)
Pop broccolini into pot of boiling water, make sure it’s submerged and pop lid on. Blanch for approx 3 mins.
- 2)
Pop 50g of butter, 50g of Parmesan, zest of 1 lemon, a crack of pepper and blanched broccolini into a blender. Blend into purée.
- 3)
Add a pinch of salt into boiled water that broccolini was in and cook pasta as per packet instruction.
- 4)
Once pasta is cooked strain off water, add sauce in and mix through.
- 5)
Serve into bowls and top with grated Parmesan.
