What’s steak and fries without the perfect sauce? This rich and creamy peppercorn sauce takes your thrice-cooked chips and steak to the next level.

Ingredients

  • 1 Red onion
  • Olive oil
  • 60ml Brandy
  • 100ml White wine
  • 2 Tsp Peppercorns
  • 300ml Bone broth
  • 1/2 Lemon zest
  • 2 Tbsp Heaped double cream

Method

  • 1)

    Finely dice one red onion.

  • 2)

    Using the pan you have just cooked your steak in, add onion to the pan and saute for 2-3 minutes.

  • 3)

    Add 60ml brandy and get the flame going.

  • 4)

    Add 100ml of white wine, two teaspoons of peppercorns, 300ml beef bone broth. Zest of half a lemon and 2 heaped tablespoons of double cream. Give it a mix.

  • 5)

    Let simmer until sauce has thickened.

  • 6)

    Serve directly over your steak.
