Ingredients
- 1 Red onion
- Olive oil
- 60ml Brandy
- 100ml White wine
- 2 Tsp Peppercorns
- 300ml Bone broth
- 1/2 Lemon zest
- 2 Tbsp Heaped double cream
Method

Finely dice one red onion.

Using the pan you have just cooked your steak in, add onion to the pan and saute for 2-3 minutes.

Add 60ml brandy and get the flame going.
- 4)
Add 100ml of white wine, two teaspoons of peppercorns, 300ml beef bone broth. Zest of half a lemon and 2 heaped tablespoons of double cream. Give it a mix.

Let simmer until sauce has thickened.
- 6)
Serve directly over your steak.
