Ingredients
- Handful Parsley
- 1/2 Red Chilli
- 1 Garlic clove
- 1/2 Chorizo sausage
- 1 Tbsp Capers
- 1 Lemon
- 6 King prawns
- 1 Linguine
Method
- 1)
Finely chop parsley, chili and garlic (keep them sperate).
- 2)
Chop up chorizo.
- 3)
Chop up capers and zest a lemon though the parsley.
- 4)
Prepare the prawns by removing shell, deveining and cutting into 1cm pieces.
- 5)
Put pasta into boiling water and cook as per packet instructions.
- 6)
Get pan nice and hot, add a small amount of olive oil then cook the chorizo for 2-3 minutes.
- 7)
The add the garlic and cook for 30 seconds.
- 8)
Add the prawns and chilli in and cook for approximately 2 minutes (until prawns are opaque).
- 9)
Turn heat of and add parsley/capers/lemon zest mix.
- 10)
Add in the pasta once cooked and mix through the pan.
- 11)
Squeeze some lemon over the top and serve with fresh parsley.
