Qucik and Easy Fried Rice

Ingredients

  • Rice, (Ideally cooked day before and left in fridge to dry a bit)
  • 2 Handfuls Frozen peas
  • 2 Bunches Broccolini
  • 2 Corn cobs
  • Spring onion
  • 4 Eggs
  • 300g Waygu sirloin, (could use any cut of steak, chicken, pork or even tofu)
  • Olive oil
  • 2 Tbsp Red curry paste
  • 3 Tbsp Soy sauce
  • 1 Lemon
  • 2 Handul Fried shallots
  • 1 Small handful Sesame seeds

Method

  • 1)

    If you have time precook rice the day before and leave in fridge to dry out a bit.

  • 2)

    Put peas, chopped broccolini and chopped white bottoms of spring onions into one bowl.

  • 3)

    Cut up green tops of spring onions into own bowl set aside for garnish.

  • 4)

    Cut corn kernels off cobs and place into a separate bowl.

  • 5)

    Crack and whisk eggs into a bowl.

  • 6)

    Slice up beef super fine.

  • 7)

    Get wok or pan on high heat. Add some olive oil and eggs. Scramble eggs by dragging egg as it cooks from outside in. Transfer to large bowl once cooked.

    Add another dash of oilve oil into pan and add beef (if beef is low fat add more olive oil). Spread out in pan and allow to go crispy.

  • 9)

    Cook for 1-2 minutes on one side, then add curry paste and mix through. Then leave to cook for another couple of minutes. Then add to the large bowl.

  • 10)

    Cook your corn in pan for approximately 1 minute. Then add your green vegetables in. Leave to cook for approximately 5 minutes then add into large bowl.

  • 11)

    Add a really good glug of olive oil to the pan and add in rice. Should be sizzling, toss around and get some colour on it. After approximately 3 minutes add soy sauce then add rice to large bowl.

  • 12)

    Give everything in large bowl a good mix.

  • 13)

    Get rice ready to serve. Squeeze of lemon over the top, then add spring onion tips, dried shallots and sesame seeds.
