Ingredients
Rhubarb Syrup
- 500g Rhubarb
- 250g Caster Sugar
- Lemon Zest
- Water
Cocktail - 1 Serve
- 60ml Rhubarb Syrup
- Ciao Bella Prosecco
- Soda Water
- Ice
Prosciutto, Stracciatella and Rhubarb Syrup Crostini

Method

Slice your 500g rhubarb and place into a saucepan. Add 250g of caster sugar, the zest of one lemon and top with water until the you have just covered the rhubarb. Simmer uncovered for 20 minutes.

Strain off through a fine mesh strainer.

Pop the liquid into the fridge until cooled.

Freeze down your cocktail glasses, add in some ice and 60ml rhubarb syrup. Fill the glass until ⅔ full with Ciao Bella Prosecco and top with soda water. Give it a stir and garnish with a slice of rhubarb.

Slice your baguette and toast.

Add your stracciatella, flaky salt, thinly slice prosciutto and top with a drizzle of rhubarb syrup.
