These are my go to quick mid week sashimi bowls, you can use any sashimi grade fish for these.

- 200g Cooked sushi rice
- 300g Sashimi grade fish diced
- 1 Tbsp Soy sauce
- 1 Tbsp Kewpie mayo
- 1/2 Avocado
- Pickled ginger
- Baby cucumbers
- Sesame seeds
- Chilli flakes
- Nori
- Crispy shallots
Method
- 1)
Cube the Sashimi quality fish, toss through a tablespoon of soy sauce and tablespoon of kewpie mayo.
- 2)
Add cooked sushi rice to a serving bowl then sprinkle over some of the pickling liquid from the ginger, top with fish, add quarter of slice avo.
- 3)
Finely slice or mandolin baby cucumber and mix with equal amounts pickled ginger and pop that into the side of the rice.
- 4)
Then top with a mix of sliced nori, chilli flakes, crispy shallots and sesame seeds.
