These are so quick, easy and delicious to whip up and make the perfect breaky to surprise Dad this Father’s Day! The @toscano_authentic Brioche English Muffins take them to another level. You can use your favourite gourmet snags and mix them up each time.

Ingredients

  • 1 Packet Toscano brioche english muffins
  • 750g Gourmet sausage of your liking, (150g per patty)
  • 5 Cheese slices
  • 5 Eggs
  • 5 Tbsp Favourite relish, (I used jalapeno and green tomato)
  • 5 Tbsp Mayo
  • 2 Tbsp Pickled baby cucumbers
  • Olive oil

Method

  • 1)

    Make your 5 patties by squeezing sausage mince of the casing and molding into a round shape (a metal ring is great if you have one). I used 1.5 sausage per patty.

  • 2)

    Add 5 tbsp of mayo into a bowl and mix through 2 heaped tbsp of pickled baby cucumbers. Set aside.

  • 3)

    In a hot pan cook your patties in some olive oil until crispy and golden, then flip them over and add the cheese slice whilst they are in the pan. Once the cheese is melted and the meat is cooked through remove the patties and put onto a plate.

  • 4)

    Add a splash of olive oil to the pan and cook 5 eggs, remove and set aside.

  • 5)

    In a dry pan or toaster, toast both sides of the english muffins. Make sure to keep a close eye on them so they do not burn.

  • 6)

    To construct the muffin, I like to spread the pickle mayo on the bottom, then layer the patty, egg, and good dollop of relish on top. Add the lid and enjoy.
