Ingredients
- Olive oil
- 8 Free range chicken wings
- 250 g Bacon or pancetta
- 2 Brown onions
- 1 tbsp Fresh rosemary
- 1 Lemon
- 3 Carrots
- 3 cloves Garlic
- 3 cobs Corn
- 2.5 L Boiling water
- 1 handful Flat leaf parsley
- Salt to taste
- Pepper to taste
Method
- 1)
Add olive oil to casserole dish on high heat and brown chicken wings. Remove once brown and set aside.
- 2)
Roughly chop bacon and add to the casserole dish.
- 3)
Once bacon is browned add 2 diced brown onions.
- 4)
Add rosemary, zest of 1 lemon & garlic.
- 5)
Once onoins have sweated down approx 10mins add carrots & corn.
- 6)
Add 2.5L of boiled water and pop on the lid on low simmer for 2hrs.
- 7)
Carefully remove bones from wings and any big clumps of skin or cartilage.
- 8)
Add handful of chopped fresh parsley. Taste the soup and gradually add salt and pepper until it’s to your taste .

Serve & enjoy.
