This Pea and Ricotta Bagel is a fresh and creamy way to start your day. With smashed peas, homemade ricotta, and a sprinkle of fresh mint and dill, this recipe is light yet satisfying. A drizzle of olive oil and a hint of lemon zest take it to the next level.

Ingredients

  • Bagel
  • Ricotta, (see recipe)
  • 1/4 Garlic Clove
  • 1/2 Lemon
  • Fresh Mint
  • Fresh Dill
  • 1 Handful Peas Defrosted
  • Extra Virgin Olive Oil
  • Flaky Salt
  • Black Pepper

Method

  • 1)

    If you able to, you can make your ricotta – see recipe. 

  • 2)

    Use a fork to smash your peas. Add in ¼ garlic clove grated, ½ a lemon zest and juice, fresh dill, fresh mint, flaky salt, crack of black pepper and a drizzle of olive oil. Mix to combine.

  • 3)

    Toast your bagel.

  • 4)

    Spread your ricotta out first and then top with your pea mix.
