Ingredients
- 1 Litre Chicken or Vegetable Stock
- 500g Quinoa, (Best if presoaked)
- 3 Green apples
- 3 Sml handfuls Pumpkin seeds
- 1 tbsp Cumin
- 1 Handful Currants
- 1 Bunch Parsley
- 1.5 Handfuls Pre-soaked almonds
- 5 Cubes Goats cheese
- Olive Oil
- 2 Lemon
Method
- 1)
Cook quinoa in stock for 10-15 minutes, drain off any excess liquid once cooked. Put into salad bowl.
- 2)
Finely dice 3 green apples and add to quinoa.
- 3)
Add 3 small handfuls of pumpkin seeds, cumin, currants chopped parsley, chopped almonds, 5 cubes of goats cheese, drizzle of olive oil and juice of 2 lemons.

Mix it all together and serve.
