Super Simple Quinoa Salad

Ingredients

  • 1 Litre Chicken or Vegetable Stock
  • 500g Quinoa, (Best if presoaked)
  • 3 Green apples
  • 3 Sml handfuls Pumpkin seeds
  • 1 tbsp Cumin
  • 1 Handful Currants
  • 1 Bunch Parsley
  • 1.5 Handfuls Pre-soaked almonds
  • 5 Cubes Goats cheese
  • Olive Oil
  • 2 Lemon

Method

  • 1)

    Cook quinoa in stock for 10-15 minutes, drain off any excess liquid once cooked. Put into salad bowl.

  • 2)

    Finely dice 3 green apples and add to quinoa.

  • 3)

    Add 3 small handfuls of pumpkin seeds, cumin, currants chopped parsley, chopped almonds, 5 cubes of goats cheese, drizzle of olive oil and juice of 2 lemons.

  • 4)

    Mix it all together and serve.
