What do you get when you combine Sushi and Nachos?
Snachos? Nah, let’s call it Sushi Nachos.
This deliciously confused dish takes less than 20 minutes to whip up! I used sashimi but feel free to swap it with whatever your fave sushi filling is!
It may sound like a wild combo, but trust me, it tastes bloody delicious!
Dice your amberjack into small cubes and add to a bowl.

In the bowl add two tablespoons of soy sauce, one tablespoon of chilli oil and two tablespoons of pickled ginger juice. Mix to combine and cover all of the amberjack.

Now you build your nachos, grab a plate and start layering. Start with your corn chips, then add the sashimi, avocado, rice, pickled ginger, spring onion, green chilli, coriander, nori, chilli mayo, fried shallots and some togarashi seasoning. Repeat this a second time to get a decent nacho mound going.
