Ingredients

  • 5 Potatoes
  • Olive oil , (or preferred frying oil)
  • Flaky salt

Method

  • 1)

    Slice your potatoes into potato chip sizes. Add to the saucepan and cover with water. Cook on the stove until the potatoes are just starting to soften. 

  • 2)

    Remove the chips from the stove and strain from the water. 

  • 3)

    Place a pot of Extra Virgin Olive Oil on the stove and bring it to 150 degrees.

  • 4)

    In three minute batches cook your potato chips. You do not want to crowd the pot. As you cook each batch, place on a wire rack to drain off excess oil.

  • 5)

    Now bring your oil temperature up to 190 degrees.

  • 6)

    In batches add your chips back into the oil. Cook each batch for five minutes. Remove from the oil and place on the wire rack to drain off excess oil.

  • 7)

    Add the chips to a bowl, give a good sprinkle of flaky salt and toss to coat.

  • 8)

    Serve while hot.
