Dad will be lost for words this Father’s Day while he is trying to get his gob around this ‘Ultimate Brekkie Muffin’. It comes with a WARNING that this should NOT be attempted to be consumed in bed. It’s stacked with onion relish, a homemade rosti, bacon, sausage pattie w cheese, eggs scrambled in @westgoldnz grass-fed garlic & parsley infused butter, more cheese, mayo & hp sauce on an English muffin!

Ingredients
- 4 Potatoes
- Fresh Thyme
- 6 Eggs
- 4 Bacon rashers
- 4 Sausage
- Westgold grass-fed garlic and parsley butter
- 4 English muffins
- 8 Cheese slices, (the dodgest cheese you can find)
- HP sauce
- Carmalised onion
- Mayo
- Salt
- Pepper
Method
- 1)
Peel and grate four potatoes with a box grater.
- 2)
Cover in water and soak to remove the starch. For approximately 30 minutes.
- 3)
Grab and bowl and colander. Place the colander inside the bowl and then line with a tea towel.
- 4)
Pour the potatoes into the tea towel. Grab the corners of your tea towel and twist until a ball is formed, squeeze the excess water from the potatoes.

Remove the potatoes from the tea towel and place into a bowl.
- 6)
Add two eggs, one teaspoon fresh thyme, pinch of flaky salt and creak of black pepper. Combine using your hands.

Lay down some baking paper and grab your metal rings. Push the potato mixtures into the ring. You want about 1cm in thickness.

On a baking tray, lay baking paper and then 4 rashers of bacon. Place in the grill for approximately 10 minutes or until crispy.

Grab your sausages and squeeze the insides into the metal ring. Press the sausage mixture into the ring to form a round patty. Remove the metal ring.

Grab your pan and add oil. Add the potato rostis and cook for three minutes Flip and cook for another 3 minutes or until golden and crispy. Remove the rostis from the pan and set to one side.

Add more oil to the pan and add your sausage patties. Cook for one minute then flip and add one cheese slice to the top of each patty. Once the cheese has melted, remove from the pan and set to one-side.

In a bowl whisk four eggs. Add one tablespoon of Westgold garlic and parsley butter to the pan and pour in your eggs. Scramble the eggs and then separate into four piles. Add a slice of cheese to the top of your egg piles. Once the cheese has melted remove and set to one side.

Toast your muffins.

Now it’s time to build your muffin. Begin by spreading the onion relish onto the bottom bun, then begin layering rosti, bacon, sausage patty, eggs, mayo and hp sauce. Add the lid to the top.
