🍔 BBQ Bacon & Caramelised onion beef burger 🥓

I never liked burgers until I tried this one from a little speak easy bar in Melbourne. Here’s the recipe below after recreating it from my memory using @tiptop.bakery grill house classic burger buns.

Makes 8 Burger
2 x @Tiptop.bakery grill house seeded burger buns (4pack)
400g Bacon
4 brown onions
1 tablespoon butter
3 tablespoons apple cider vinegar
2 tablespoon honey
1.6kg Course Beef Mince (20-30% fat)
Flakey salt
Olive oil
16 thin slices Swiss cheese
8 tablespoon Mayo
1 tablespoon Dijon mustard
8 tablespoon Smokey bbq sauce

Method
1. Dice bacon and add to a pan on high heat and cook until fat has rendered out and bacon is crispy. Add a knob of butter and 4 finely sliced brown onions and cook on medium heat and stir occasionally. Once the onions are nicely caramelised stir through 3 tablespoons apple cider vinegar and 2 tablespoons of honey and set to one side to keep warm.
2. To prepare the patties arrange the mince in a log over some baking paper so the grain of the mince is running the same way and wrap it tightly into a sausage so you can slice 8 even patties of approx 200g each. Press each patty down with a spatula until it’s slightly larger than the bun, sprinkle with Salt and rub with oil then place them onto a grill or hot pan. Cook for 4 mins on a high heat until crispy then flip them add some cheese and the onion and bacon mixture.
3. Toast your Tip Top grill house burger buns and have the mayo with a tablespoon of Dijon mixed through ready to go.
4. After 3 mins the patty should be still pink if you like it could through leave for 5 mins.
5. Add some mustard mayo to the lid and some bbq sauce to the base then the patty.
6. Close her up and you’re good to go!

Two days chasing 100kg + barrel bluefin tuna in VIC with no luck. We followed it up with a quick salvage mission before I flew out for some beautiful Port Philip scallops in a chilly 30 knot breeze aboard @hoookn.adventures

Very grateful to Benji @hoookn.adventures for having me along chasing tuna on a couple of days he had set aside for himself, Reece his trusty sidekick & Max @nautical_productions & Cal @crogfilms for making the trek down at short notice to capture the whole thing.

This mission was unsuccessful but the quest is not over! It just made me excited to put in the time to make it happen. 🤙

Each destination reflection journal entry has a corresponding QR code that takes you to a family friendly vlog style episode of our time there. They were a lot of effort to put together at the time but such a beautiful thing for our family to have to look back on from what was the best year of my life… so far!

That way they feel approachable and you can sub in whatever makes the most sense for you whether you’re cooking at home or out on the road preparing your fresh catch of the day.
