Ingredients
- 3 Green Bay Lobsters from Australian Bay Lobsters , also known as bugs
- 150 g Salted butter
- 1 sprig Rosemary
- 1 Lemon
- 1 tsp Chopped garlic
- Pepper
- Salt
- Chilli flakes, optional
Method
- 1)
Pop 150g of butter into a saucepan with a sprig of rosemary (keep the end out so you can hold onto it to use as your brush later), the zest of 1/2 a lemon, a couple of cracks of pepper and a heaped teaspoon of chopped garlic.
- 2)
Melt the butter down on the stove top.
- 3)
While your butter is melting, get a sharp knife and cut the lobster down the middle in half.
- 4)
Using your rosemary sprig as a brush, paint some of your melted butter mix onto the meat side of the lobster then place cut side down onto either a pan on high heat or on a scorching hot BBQ.
- 5)
Cook for approx. 4 mins on that side, then flip them over and paint again with the garlic butter.
- 6)
Cook for approx. 2 mins on second side.
- 7)
Drizzle the rest of your butter over the top and finish with a squeeze of lemon, a sprinkle of salt and some chilli flakes (optional).
