Banana Bread Porridge

“Banana Bread” Porridge, we used @comvita_au’s Mānuka Honey MGO 30+ Blend to whip up this absolutely delicious porridge! Get your bananas crispy and caramelised using the Mānuka Honey to take your porridge to a whole new level this winter!

Ingredients

  • 1 cup Oats
  • 2 cups Coconut-almond milk, (or any other type of milk)
  • 2 heaped tsp Hemp seeds
  • Nutmeg
  • Cinnamon
  • 1/2 tsp Vanilla extract
  • 2 Bananas, (not too overripe!)
  • 1 heaped tsp Unsalted butter/ghee
  • 2 heaped tsp Comvita's high-quality Manuka Honey
  • 1 handful Pecan nuts , (or any other type of nut)

Method

  • 1)

    Start by heating up a pan for the caramelised bananas on a low heat.

  • 2)

    Then using a measuring cup, put 1 cup of oats into a pan followed by 2 cups of coconut-almond milk.

  • 3)

    Next add 2 heaped teaspoons of hemp seeds, 1/8 teaspoon nutmeg, 1/4 teaspoon cinnamon and 1/2 teaspoon vanilla extract to the pan.

  • 4)

    Give the oats a good mix before popping the oats on low heat to cook for approx. 7 minutes.

    While the oats are cooking, slice 2 bananas down the middle lengthways.

  • 6)

    Then add 2 heaped teaspoons of unsalted butter/ghee to a second pan followed by a pinch of cinnamon and a pinch of nutmeg.

  • 7)

    Once the butter/ghee has melted, add 2 heaped teaspoons of Comvita’s high-quality Manuka Honey.

  • 8)

    As the honey is melting pop the banana slices into the pan and cook for approx. 3 minutes.

  • 9)

    Turn the heat off, give the bananas a good move around to soak up the caramelised sugars, then transfer the bananas to a chopping board.

  • 10)

    To serve, divide the porridge into 2 bowls, then gently place a few of the caramelised slices on top.
