Banana Bread

Before you ask this one doesn’t require any mashing of the bananas and leaves you with amazing chunks of banana through it. There’s not much else to say, it’s absolutely delicious!!!

Ingredients

  • 200 g Butter + extra to grease tin
  • 600 g Bananas (overripe if possible) + 1 extra for on top
  • 200 g Raw or unrefined sugar (we used panella) + a little extra to sprinkle on top
  • 1 tsp Vanilla extract
  • 1 tsp Cinnamon
  • 100 g Honey
  • 1 tsp Baking powder
  • 1 tsp Bicarb of soda
  • 250 g Flour
  • 2 Eggs

Method

  • 1)

    Preheat oven to 160C.

    Melt down butter.

  • 3)

    Slice 600g of banana into bowl then add in sugar, vanilla extract, cinnamon and honey.

  • 4)

    Get your butter out once melted, pour the butter evenly over the bananas.

  • 5)

    Mix the butter through melting the sugar and starting to cook and soften the banana.

  • 6)

    Now add baking soda and bicarb of soda and sift the flour in.

  • 7)

    Next crack in eggs and mix.

  • 8)

    Grease your loaf tin or cake tin with butter. Be generous.

  • 9)

    Pour the cake mix in.

  • 10)

    Cut the extra banana in half and lay gently on top of mix.

  • 11)

    Sprinkle sugar on top of bananas.

  • 12)

    Put into oven for 1 hour to 1 hour and 10 mins.

  • 13)

    Leave to rest for 30-60 mins before cutting.
