Ahead of this weekend (and because iso baking doesn’t seem to be slowing down) here is an Anzac biscuit recipe to get you drooling! Super simple ingredients and really quick to make.

Ingredients
- 1 cup Rolled oats
- 1 cup Coconut flakes (preferably "moist")
- 1 cup Flour
- 1/3 cup Brown sugar
- 1 Lemon zest
- 1 tsp Bicarb soda
- 125 g Butter
- 1 tbsp Maple syrup
- Salt flakes to sprinkle
Method

Preheat oven to 160C fan bake.

Add butter and maple syrup to mixing bowl and put in oven to melt.
- 3)
Into a separate mixing bowl add oats, coconut flakes, flour, sugar, lemon zest and bicarb soda.
- 4)
Line baking trays with baking paper.

Once butter has melted pour over mixture in other mixing bowl. Preferably pour onto sugar so it dissolved. Stir thoroughly.

Weigh total mixture then divide by 10. ie our mixture weighed 660g, so we weighed each biscuit to be 66g.

Form each portion into a ball and give a big squeeze, then flatten out in Palm and place onto baking tray.

Once all formed, place in oven.

After approx 10’mins, squish down with a spatula to ensure they’re flat.

After 15-20 mins remove from oven, sprinkle with salt flakes and leave to cool for at least 15 minutes.
