Banana & Choc Chip Pancakes

Ingredients

Pancakes

  • 300 g Flour
  • 50 g Coconut sugar
  • 3 Bananas, chopped
  • 350 mL Milk
  • 1 Egg
  • 1 Pinch of salt
  • 1 tsp Vanilla paste
  • 50 g Butter, melted
  • 50 g Chocolate chips
  • 4 tsp Baking powder

Toppings (or your choice)

  • 1 Punnet Blueberries
  • 1 Vanilla yoghurt
  • 1 Honey

Method

  • 1)

    Add 300g flour, 50g coconut sugar, 3 chopped bananas, 350mL milk, 1 egg, pinch of salt and 1 tsp vanilla paste to a mixing bowl.

  • 2)

    Melt 50g of butter and add into mixing bowl. Mix until you get a thick oozy batter consistency.

  • 3)

    Add 50g choc chips and 4 tsp baking powder and mix through.

  • 4)

    Get a pan on medium heat and melt some butter then ladle in pancake mix.

  • 5)

    Cook on one side till bubbles appear then flip until nice and brown.

  • 6)

    Top with vanilla yoghurt, berries and honey or your choice of toppings.

Notes

If batter is too thick add some more milk, if too runny add some more flour.
