Ingredients
- 400 g Slendier Konjac Noodles
- 250 g Chicken mince
- 1 tbsp Thai red curry paste
- 1 bunch Broccolini
- 1 handful Coriander and basil
- 1 Red chilli
- 1 handful Peanuts
- 1 Lime
- 1 tsp Fish sauce
- 1 tsp Honey
- 1 tbsp Peanut oil
Method
- 1)
Mix together 250g chicken mince and 1 heaped tablespoon of red Thai red curry paste.
- 2)
Slice 1 bunch of broccolini lengthways into strips.
- 3)
Finely chop a small handful of coriander and basil, 1 red chilli and a small handful of peanuts.
- 4)
Make dressing by mixing the zest and juice of 1 lime, 1 teaspoon of fish sauce and 1 teaspoon of honey.
- 5)
Open your Slendier noodles, rinse and pop into a bowl.
- 6)
Turn your wok/pan onto a high heat. After it has come to heat add a tablespoon of peanut oil.
- 7)
Add your chicken mince in and break apart with a spoon or spatula.
- 8)
After your chicken has cooked for approx. 1 minute, add the broccolini.
- 9)
After another minute, add in your noodles and toss.
- 10)
After another minute, add in your dressing, peanuts and chilli, your herbs and toss!
- 11)
Take off the heat and enjoy!
