Sausage Ragu

Ingredients

  • Olive oil
  • 8 Sausages
  • 500 g Pasta
  • Basil
  • Kale
  • 1 Lemon
  • 1 L Cooked down tomato sauce/pasta sauce
  • Black pepper
  • Salt
  • Parmesan/Pecorino

Method

  • 1)

    Put your pan on high heat and add some olive oil. Empty the contents of the sausages into pan in chunks.

  • 2)

    Cook pasta as per packet instructions in boiling salted water.

  • 3)

    Pick the leaves off basil and put into bowl. Finely chop kale and add to the bowl.

  • 4)

    Flip sausage pieces once starting to crisp/brown on one side (ours took approximately 4 minutes), then cook for a couple of minutes on the other side.

  • 5)

    Put paper towel on a plate and transfer sausage bits to plate when cooked.

  • 6)

    Pour tomato pasta sauce into pan and bring to simmer.

  • 7)

    Add greens and cook down for 1-2 minutes. Add zest of one lemon, good crack of black pepper and pinch of salt to pan. Stir together.

  • 8)

    Add sausage back into pan and mix through.

  • 9)

    Once pasta is cooked and strained off, mix through the pan with pasta sauce. Serve topped with grated cheese and juice of lemon.
