Burnt Butter, Orange and Walnut Banana Bread

Ingredients
- 600g Banana, (one extra banana to place on top)
- 200g Raw Sugar, (extra to dust on top of banana)
- 200g Westgold Salted Butter
- 1 Orange
- 250g Plain Flour
- 1 Tsp Bi-Carb Soda
- 1 Tsp Baking Powder
- 2 Eggs
- 100g Walnuts
- 1 Loaf Tin (26.5l x 13.5w x 6.5h)
Method

Preheat your oven to 160c

Peel 600g of bananas and place into a bowl.

Break your banana up into little chunks, add in 200g of raw sugar.

Get a pan on medium heat and add 200g of Westgold salted butter. Melt the butter for 5 minutes until it has browned in colour and starting to foam.

Pour your browned butter over the banana and raw sugar and mix together. Ensure the raw sugar has dissolved before moving onto the next step.

Crack two eggs and mix in.

Add the zest of one orange

Roughly chop your walnuts and add to the bowl.

Sift in your flour, add in the Bi-carb soda and baking powder.

Butter your tin.
- 11)
Pour your mixture into the tin, slice a banana in half and place on top, then sprinkle some raw sugar on top of the banana to caramleise.

Pop into the oven and cook for approximately 50 -70 minutes depending on the size of your tin and oven. Your skewer should come out clean. Leave to rest 30 minutes (this is really important) before removing from the tin.
