Butterflied Garlic & Lemon Prawns

- 1 kg Green (raw) King Prawns
- 150 g Salted butter
- 1/2 bulb Garlic
- Zest of 1 lemon
- Salt & pepper
Prep your green prawns by running a knife down the underside of the prawn without cutting all the way through and crack them open. Remove the poo shoot and guts and repeat with the rest of the prawns.
Make your garlic and lemon butter by melting 150g salted butter into a pan with half a bulb of garlic and the zest of one lemon.
BBQ the prawns by basting the prawns with the butter and placing them onto a grill on a super high heat.
Cook them for approx. I minute (until just cooked) then flip over for 30 seconds. Set them aside on a serving plate.
Hit them with a squeeze of lemon and season with salt and pepper just before they hit the table.
