Whether you call it a chicken parmi or parma, this is yum!

Ingredients
- 1 Litre Oil, (we used grapeseed oil)
- Panko crumbs
- Pecorino and parmesan
- 2 Lemon
- Plain flour
- 2 Eggs
- 2 Chicken breast
- 1 Ball Di latter or buffalo mozzarella or another melty cheese
- 4 Tbsp Cooked down tomatoes
- Shaved leg ham
- Salt
- 1 Cabbage half
- 1 Green apple
Method
- 1)
Preheat oven on 220C
- 2)
Start heating 1L of oil in pan on low heat (note: after you use oil you can strain it back into a container and use again for next time you fry)

Finely chop cabbage
- 4)
Finely chop 2 cheeks of apple into matchsticks
- 5)
Put apple and cabbage into a bowl, add a pinch of salt, some olive oil, juice of a lemon (zest it first into a separate bowl), then with your hand mix and squeeze it all together to help bind it all and to soften the cabbage. (It’s important you make the slaw before you get started so the cabbage has time to break down/soften.

Put panko crumbs into a bowl with a few good pinches of grated parmesan and the lemon zest.

Put plain flour in another bowl

Then in another bowl whisk up eggs

Cut off any extra tenderloin or jibbly bits off your chicken breast and cut in half through the middle of the chicken so it butterflies open.

Hammer out chicken with a meat hammer (or cover in baking paper and whack with a skillet

Put chicken in flour first, dust of excess
- 12)
Then into the egg, let excess drip off
- 13)
Then into the panko crumbs. Really cover the chicken and press the crumbs into it so they stick
- 14)
Turn up your pan with the oil. You want it at 180C. If you don’t have a thermometer, put some crumbs in and you are wanting them to really bubble and cook as soon as they go in to indicate your oil is hot enough

Put chicken into oil, if not completely buried make sure you flip them.

Leave to cook until golden and crispy all over. Ours took approximately 5 minutes.

Remove chicken and place onto paper towel, on a plate

Place chicken onto baking tray with baking paper and cover first with cooked down tomato sauce, then shaved leg ham, then sliced mozzarella

Put in oven at 220c Until cheese is completely melted on top. Ours took approximately 15-20 minutes but it is very oven dependent

Serve up with cabbage slaw, a pinch of salt on chicken and a wedge of lemon
