Chicken Ramen

After spending a month in Japan earlier this year, it was important for us to learn to make a mean ramen to avoid withdrawals! And so here it is for you all to make too!

  • Serves: 3 large adult servings

Ingredients

  • 1 Large chicken breast
  • 2.5 L Chicken stock, See chicken bone broth recipe
  • 100 mL Tamari
  • 50 mL Mirin
  • 3 Eggs
  • Chilli flakes
  • 1 packet Ramen noodles
  • Spring onion
  • Nori

Method

  • 1)

    Add olive oil to pan and fry chicken breast.

  • 2)

    While chicken is cooking, heat 2.5L of chicken stock in saucepan.

  • 3)

    Add Tamari, Mirin and some chilli flakes to the stock.

  • 4)

    While stock is heating up, soft boil 3 eggs (this will take 6 minutes, add cold water to pot after 6 minutes to stop from cooking further)

  • 5)

    Once stock has come to the boil, add packet of ramen noodles.

  • 6)

    When noddles are cooked, serve noodles and stock in bowl. Top with egg, spring onions, nori and chicken.
