If you’ve ever been to our house, you’ve probably had ‘the green salad’. We have been making it for years and it honestly goes with everything (even with a couple of eggs for breaky)! Healthy and easy, no cooking involved!

Ingredients
- 1 Bunch Kale
- 1 Bunch Spinach
- Spring onion
- Handful Almonds, pre-soaked
- 1 Chilli
- 1 Lemon
- 2 Avocados
- Goats cheese
- Olive oil
- Apple cider vinegar
- Dill
Method
- 1)
Chop spring onion, dill, pre-soaked almonds, chilli (optional), spinach and kale and place into salad bowl.
- 2)
Roll out lemon to soften it for juicing. Zest the lemon and juice.
- 3)
Add the avocados chopped, goats cheese (approx 1 cube per person), olive oil (either form the goat’s cheese or separately) and apple cider vinegar to dress salad.
- 4)
Toss everything together and serve.
